One Pot Bacon Cheeseburger Pasta

This meal is the perfect back-to-school recipe when you don't know if dinner is at 4:30 or 9 because of extracurricular activities!

I'm back with yet another one pot meal. I loved when the blog world exploded with one pot recipes because, seriously, they are STAPLES during back-to-school and soccer season. There are so many meet-the-teacher meetings, open houses, grade level meetings, etc. along with soccer practices 3 to 4 times a week in the beginning of the school year. Dinners have got to be quick because who knows if we're eating right after school or right before bedtime, because we eat together as a family. Usually one of us parents take one of the kids to soccer and the other stays home to fix dinner. It's been working pretty well and I have to say, one pot meals are the way to go. This particular meal is a fantastic recipe that tastes like a bacon cheeseburger. And honestly, you can't beat pasta that tastes like a burger!

What you need:
  • Olive oil
  • 1 small onion, chopped
  • 1 lb. ground beef 
  • Salt and pepper to taste
  • 2 Tbsp. tomato paste
  • 3 Tbsp. Worcestershire sauce
  • 1 can (14 oz.) petite diced tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1/4 cup ketchup
  • 3 Tbsp. yellow mustard
  • 2 1/2 to 3 cups beef broth
  • 1 box (12 oz.) shell pasta
  • 3 Tbsp. fresh parsley, chopped
  • 4 oz. cream cheese
  • 2 cups smoked Gouda, shredded, divided
For garnish:
  • 1 medium tomato, diced
  • 1/4 cup bacon bits, plus some
  • 3/4 cup shredded lettuce
Directions:
  1. Add a drizzle of olive oil to a stock pot and heat over medium heat.
  2. Add onion and cook for 2 to 3 minutes.
  3. Add ground beef and crumble while it browns. Season with salt and pepper and drain grease, if needed.
  4. Add tomato paste and Worcestershire sauce and cook for 2 to 3 more minutes.
  5. Add diced tomatoes, tomato sauce, ketchup, and mustard.
  6. Add 2 1/2 cups beef broth to start. Then add uncooked pasta.
  7. Cover stockpot and bring to a boil.
  8. Then reduce heat and cook for 8 to 10 minutes or until pasta is cooked al dente. Add remaining 1/2 cup beef broth if it gets too thick or the pasta isn't done cooking.
  9. Remove from heat and add cream cheese and 1 cup of gouda.
  10. Stick under a broiler until cheese is golden and bubbly.
  11. Garnish with remaining gouda, tomato, bacon bits, and lettuce.
