These bars are the perfect treat for any time of year, but especially back to school!
Back to school time just makes me think of M&M cookies and I don't know why. That I can recall, we didn't have M&M cookies for after school snacks or anything. But I'm not going to question it. I love making sweet treats for my kids for after school snacks on occasion. I made these last year and they loved them! It's such a great recipe - not too much skill needed to make it :)

What you need:
- 2 cups + 2 Tbsp. all purpose flour
 - 1/2 tsp. salt
 - 1/2 tsp. baking soda
 - 12 Tbsp. unsalted butter, softened
 - 1 cup brown sugar
 - 1/2 cup granulated sugar
 - 1 large egg + 1 large egg yolk
 - 2 tsp. vanilla extract
 - 1 bag (12 oz.) M&Ms, divided
 
- In a medium bowl, whisk together flour, salt, and baking soda.
 - In a large bowl, beat butter and sugars together until light and fluffy.
 - Add egg, egg yolk, and vanilla to butter mixture and mix until combined.
 - Using a rubber spatula, fold dry ingredients into wet ingredients until just combined.
 - Fold in 1 cup M&Ms gently.
 - Pour batter into a greased 9x13-inch pan and smooth with rubber spatula.
 - Top with remaining M&Ms and press in slightly.
 - Bake in a preheated 325 degree oven on a rack in the lower-middle position for 25 to 30 minutes or until top of bars is golden brown, a little firm to the touch, and the edges have begun to pull away from the sides of the pan.
 - Let cool and then cut into bars.
 
If you have a little more time, this Peanut Butter Sweetie Pie is wonderful and basically a giant deep dish cookie. Also...I cannot tell you how badly I want to make these M&M Cheesecake Bars from Shugary Sweets. You don't have to pick between cookie bars and cheesecake!
