Chocolate Oreo Cake

This homemade dark chocolate cake is smothered in the best Oreo frosting ever!

My oldest kid, Matthew, is a boy after my own heart. He loves chocolate to the obsessive level that I do and pretty much always picks out a pretty extravagant chocolate cake of some sort for his birthday. Last year, he chose this Chocolate Oreo Cake and I gladly made it. It actually wasn't as much work as I thought it would be, which was great because it was a week after I was diagnosed with the flu and a pulmonary embolism, which came a week after getting a cardiac ablation. The last few years have been rough around his birthday but I definitely make sure that the kids are spoiled with whatever cake they want.

This cake is a dark chocolate cake made from scratch. It's moist moist moist! The frosting is sugary and full of Oreos. The combination of the cake and frosting is killer! Matthew definitely chose well.

What you need:
For the chocolate cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup Hershey's Special Dark cocoa powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1 1/2 tsp. vanilla
  • 1 cup boiling water
For the Oreo frosting:
  • 1 1/2 cups unsalted butter (3 sticks), softened
  • 1 1/2 cups shortening
  • 8 to 9 cups powdered sugar
  • 3 cups Oreo crumbs
  • 1 tsp. vanilla extract
  • 6 to 7 Tbsp. water or milk
  • Oreos, for decoration
Directions:
  1. For the cake: whisk together flour, cocoa powder, baking soda, and salt together in a large bowl.
  2. Add eggs, buttermilk, and vegetable oil to the dry ingredients and mix well.
  3. Add vanilla and boiling water and mix well.
  4. Divide batter between three 8-inch round cake pans that have been greased and lined with parchment paper rounds.
  5. Bake in a preheated 300 degree oven for 30 to 33 minutes or until a toothpick inserted in teh center comes out clean. 
  6. Allow cake to cool for 10 to 15 minutes in pan before removing to cool completely on a wire rack.
  7. For the frosting: beat together butter and shortening until smooth.
  8. Add 4 cups powdered sugar little by little and mix until smooth.
  9. Add vanilla and Oreo crumbs and mix until combined.
  10. Add 4 to 5 more cups of powdered sugar and mix until smooth. Add water or milk to reach desired consistency.
  11. Set aside 3 1/2 cups of frosting for in between the layers.
  12. To assemble: use a serrated knife to level the top of the layers of cake.
  13. Place one layer on a plate or platter and spread half of reserved frosting on top.
  14. Top with a second layer and frost with remaining reserved frosting.
  15. Top with last layer and frosting the entire outside of the cake.
  16. Decorate with Oreo cookies and cookie crumbs.
