This chicken is great on its own but even better in other dishes - like salad or pasta!
I have been using this Chili Lime Chicken recipe for a while for different recipes, especially for salad nights if they fall on Taco Tuesday. If you are wondering what the heck is going on with that red watery food with chunks of tomato in it is...I attempted cauliflower Spanish "rice" and it didn't work at all. Anyway..this chicken is a perfect base recipe to use for a Southwest style salad, but also great on their own. Lots of flavor packed in during the marinating time!!

What you need:
- 2 lb. chicken breasts or tenderloins
- 1/2 cup fresh lime juice
- 3 tsp. lime zest
- 1/4 cup olive oil
- 4 Tbsp. fresh cilantro, chopped
- 2 jalapeno, finely diced
- 4 cloves minced garlic
- 1 Tbsp. honey
- 2 tsp. salt
- 1 tsp. chili powder
- In a large bowl or zipper bag, mix together all marinade ingredients and add chicken.
- Marinate for 2 hours.
- Cook chicken in desired method.
I sub in this Chili Lime Chicken for the taco seasoning spiced chicken in this Chili Lime Chicken Salad from The Recipe Critic often. Although I don't sub in this recipe, I do adore this variation of the chili lime chicken in this Cilantro Lime Chicken Taco Salad.
