This easy sheet pan meal has potatoes, asparagus, carrots, onions, and sausage!
Sheet pan dinners are just awesome and roasted veggies are also awesome. It really cracks me up to think that I wouldn't go near smoked sausage/kielbasa when I was a kid. Now look at me! It's one of my favorite proteins to use for a quick meal.

What you need:
- 1 tsp. dried basil
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 tsp. paprika
- 1/2 tsp. onion powder
- Salt and pepper to taste (at least heaping 1/4 tsp. of each)
- 1 lb. baby red potatoes, diced
- 8 oz. petite baby carrots
- 4 Tbsp. olive oil, divided
- 8 oz. asparagus, cut into 1-inch pieces
- 1/2 large yellow onion, thinly sliced
- 1 pkg. smoked sausage, sliced
- 1 Tbsp. minced garlic cloves
- 1/3 cup shredded Parmesan
- In a small bowl, mix together basil, thyme, oregano, paprika, onion powder, and salt and pepper.
- Arrange potatoes and carrots on a foil-lined sheet pan. Drizzle with 2 Tbsp. olive oil and sprinkle half of seasoning mix on top. Toss gently to coat.
- Bake in a preheated 400 degree oven for 20 minutes.
- Use a spatula to push potatoes and carrots to one side of the pan. Add asparagus, onion, sausage, and garlic.
- Drizzle with 2 Tbsp. olive oil and sprinkle with remaining seasoning mix. Toss to combine and then toss with potatoes and carrots to combine.
- Bake for another 10 to 15 minutes or until veggies are roasted to desired preference.
- Top served with Parmesan.
