One bowl and one pan bring a full dinner with loads of veggies and wonderful pesto flavor to the table in a little over 30 minutes.
As much as I love one pot meals, I think one pan/sheet meals are just as spiffy. This recipe has pesto, which is my life blood, and all kinds of other goodies that the pesto makes immensely more delicious: chicken, potatoes, carrots, and broccoli. It's got everything you need for a good meal and it's easy with little clean up!

What you need:
- 1/3 cup pesto
- 1 Tbsp. olive oil
- 2 tsp. ranch seasoning mix
- 3 to 4 cloves minced garlic
- 2 tsp. Dijon mustard
- 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 cups red potatoes, diced into 1/2 to 1 inch cubes
- 1 1/2 lb. chicken breasts, cut into 1 inch cubes
- 3 cups broccoli florets
- 1 cup thinly sliced carrots
- 1/2 cup shredded Parmesan cheese
- Whisk together pesto, olive oil, and . Set aside.
- Place potatoes on a foil-lined and greased large baking pan. Toss with 2 Tbsp. pesto mixture.
- Roast in a preheated 400 degree oven for 15 to 20 minutes.
- Meanwhile, add chicken, broccoli, and carrots to the pesto mixture and toss until evenly coated.
- Once potatoes have roasted, remove pan from oven and push the potatoes to one side. Add chicken, broccoli, and carrots and spread into a single layer.
- Bake for 15 minutes and then top with Parmesan cheese.
- Bake for an additional 5 minutes or until chicken is cooked through and veggies are tender.
- Broil to add a golden color, if desired.
