Grilled Chicken with Strawberry Salad

This salad is perfect for summertime!


Hello, fellow internet people. So apparently the big thing now that everyone is noticing (and hating) is that food bloggers like to write stories in their posts. Fun fact: this is for Search Engine Optimization reasons. Also fun fact: I am awful at it. Sometimes I have trouble even describing the food with words other than variations of good (thanks, Thesaurus) or delicious. I say cut the food bloggers some slack with the stories and just scroll for the recipe. However, I think we can all agree that in-post ads AND pop-ups for subscribing to mailing lists/social media page follows are HORRIBLE. Anyways...here's today's recipe: SALAD! :)

What you need:
  • 1 lb. chicken breast
  • 1/4 cup orange juice
  • 3 Tbsp. lime juice
  • 2 cloves minced garlic
  • 1 Tbsp. cilantro, chopped
  • 1/2 tsp. black pepper 
  • Salt
  • Spring mix salad
  • Sliced strawberries
  • Mandarin orange slices
Directions:
  1. In a gallon size zipper bag, mix together orange juice, lime juice, garlic, cilantro, and pepper.
  2. Add chicken and marinate for 1 hour or up to 24 hours.
  3. Remove chicken from marinade and season with salt.
  4. Cook chicken in desired method and allow to rest 5 minutes before slicing.
  5. Serve salad by topping spring mix with strawberries, oranges, and sliced chicken.

      I love this Cilantro Lime Chicken Taco Salad recipe. It's probably my absolute favorite of all time. However, I wouldn't say no to this Parmesan Peppercorn Chicken Salad with Sundried Tomatoes and Pasta from Stuck on Sweet because c'mon it has pasta in it!
