30 minutes and a deep skillet is all you need for this fantastic, hearty tortellini casserole!
I don't make a lot of tortellini but occasionally I really crave it. I wanted to find a quicker recipe that didn't involve a long stewed sauce or crockpot or anything like that. One pot recipes are fantastic and there are more and more of them now. This recipe was quick and easy and made for such a hearty and filling dinner!

What you need:
- 20 oz. cheese tortellini
- 1 lb. ground beef
- 1 small onion, diced
- 2 cloves minced garlic
- 1/2 tsp. Italian seasoning
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 can (15 oz.) diced tomatoes, drained
- 2 1/2 cups beef broth
- 1/4 cup heavy cream
- 1 1/2 cups Italian cheese blend, divided
- 2 Tbsp. chopped fresh parsley
- In a large skillet over medium-high heat, cook ground beef until almost cooked through, crumbling as you go. Drain if needed.
- Add onions and garlic and cook until onion begins to soften. Stir in salt, pepper, and Italian seasoning.
- Add tortellini, tomatoes, and broth and bring to a boil.
- Cover and reduce heat. Simmer for 5 minutes.
- Remove cover and simmer for a few more minutes until liquid is almost absorbed.
- Remove from heat and stir in heavy cream and 1/2 cup cheese.
- Top with remaining cheese and place under a broiler for a few minutes until cheese starts to brown.
- Serve topped with parsley.
