Baked Chicken with Tomatoes, Basils, and Red Chillies

The easiest oven-baked chicken recipe with loads of flavor from fresh tomatoes and basil and spicy red chile peppers!

I love this recipe because it's ridiculously easy to make with few ingredients but it doesn't skimp on flavor. The chicken is tender, the bursting tomatoes are juicy, the peppers add the perfect amount of heat, and the charring on the basil leaves adds so much dimension to the flavor. It really is a great recipe and so so easy. We paired ours with roasted potatoes and steamed broccoli.

What you need:

  • 3 chicken breasts (can cut in half lengthwise if you want it to cook faster)
  • 1 pint grape tomatoes
  • 1 to 2 red chillies, sliced
  • 15 large basil leaves, torn
  • 10-12 smaller basil leaves for garnish
  • 1 Tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions:

  1. In a casserole dish, place chicken in a single layer. Sprinkle tomatoes, chillies, and large basil leaves over the top.
  2. Drizzle with olive oil and season with salt and pepper.
  3. Bake in a preheated 425 degree oven for 30 to 45 minutes or until chicken is cooked through (depending on your chicken, time may vary).
  4. Top with remaining basil leaves and serve.

As always, I went straight to hoard any recipe that says "best" in the title with The Very Best Oven Baked Chicken Breast from The Suburban Soapbox. This Chicken Madeira is not oven-baked, but the chicken is still super tender and juicy and it is covered in broiled cheese!
