Countdown to 2021: Fantastical Faves

Counting down my favorite recipes of 2020 to ring in the new year!


Happy New Year! Here's to hoping 2021 is much kinder to us than 2020 was. I think this is my favorite day of the Countdown is today because I get to share the best of the best, in my opinion. I decided to switch things up and do my favorite from each month. Even that was hard to do so I have a few honorable mentions. I also will mention Nick and the big kids' favorite foods that were posted in 2020.
  1. Copycat Chicken Bryan (Jan) - This is a lot of work with a seasoning mix, a sauce, and it is a labor of love, but it also has goat cheese and tomatoes and I love it so much!
  2. Copycat Pickle Pizza (Feb) - This made the Most Popular list because it was viewed a lot. I agree with that wholeheartedly and again....it's a GREAT pizza.
  3. Best Biscuits Ever (Mar) - I was surprised this one stayed hidden. It's a little secret gem. They are the best homemade biscuits I've ever had.
  4. Three Cheese Chicken Broccoli Alfredo (Apr) - Nick actually made this recipe the first time because I had been taking Cami to Honors choir at the time and he's not the best at getting pictures, so we made it again and I snapped the pictures. It's a very solid alfredo recipe.
  5. Bacon Cheeseburger Spaghetti (May) - I love spaghetti - just regular spaghetti and most times when I make new spaghetti recipes, they are good, but nothing touches regular spaghetti. This does. It's a toss up whether I'd rather have bacon cheeseburger spaghetti or regular spaghetti. It's so yummy.
  6. Coconut Cream Pie (Jun) - I used to be kinda meh about coconut and became obsessed with those little layer coconut cakes in the freezer aisle. I decided to try a homemade coconut cream pie and I'm in LOVE.
  7. Lemon Raspberry Dutch Baby Pancake (Jul) - I'm now a believer that all pancakes should be dutch baby pancakes and also I enjoy lemon curd.
  8. Salsa Verde Pepper Jack Chicken Salad (Aug) - This salad has a homemade mango dressing and there's avocado and mandarin oranges in it. It's all the yummy things I want in a salad.
  9. Triple Layer Pumpkin Spice Pie (Sep) - I almost went with the fried chicken sandwiches but had to change my answer because of the candied nuts that go on this pudding pie. It's perfection.
  10. Greek Chicken Rice Bowls (Oct) - I'm crazy about Greek foods and recently got Nick hooked on hummus - at the time I made this, he wouldn't even try hummus and now he eats it almost every day. I think about this recipe a lot.
  11. Jalapeno Popper Mac & Cheese (Nov) - I have made this mac and cheese as a side and added chicken to it to serve it for dinner. I love it both ways and I typically don't care for mac and cheese that has breadcrumbs on it.
  12. Peppermint Poke Cake (Dec) - I had to go with this poke cake for December's favorite. It's rich chocolate cake and then has Oreos and peppermint bits too. I did Andes mints and peppermint chocolate bark too. So good. So perfect for the holidays.

Honorable mentions: Broccoli Stuffed Chicken from February, Pork Chops with Creamy Pan Gravy from March, Buttermilk Fried Chicken Sandwiches from September, Butterfinger Cheesecake from October, Triple Peanut Butter Cookie Pie from October, and Oreo Peppermint Cookies from December.

 

I made the family narrow their favorites down to three this year because I was not up for making top 5 or top 10 lists - less work for me, but harder for them. These go in order of most favorite to least most favorite :)

Nick's favorite: Perfect Steak with Herbed Butter, Latin Burgers, Philly Cheesesteak Pasta

Matt's favorites: Three Cheese Pasta with Kielbasa and Peppers, School Pizza Copycat, Three Cheese Chicken Broccoli Alfredo

Cami's favorites: Copycat Marion's Pizza, Buttermilk Fried Chicken Sandwiches, Eggs Benedict
