Greek Meatball Bowls

Meatballs with a secret ingredient served over couscous with a tomato cucumber salad and tzatziki sauce.

I feel like I'm posting a lot of foods that are Greek or Mediterranean and I cannot get enough of it. I am always craving tzatziki sauce. As long as I'm not making the boys eat tzatziki or feta, they are okay with Greek food. Well, Matthew also doesn't eat the cucumber and tomatoes either, but he's fine with the protein and the grain LOL. I only have one other couscous recipe on my blog which is crazy to me because it's from January of 2020 and it took me this long to post the next one. That likely means that we had couscous for the first time in 2018 and then we had it again in 2019 (this recipe). I cannot think of a time in 2020 that we had it and I'm definitely going to remedy that in 2021. Alright enough boring rambling, check out this awesome recipe!

What you need:

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/4 cup grated cucumber
  • 1 clove minced garlic
  • 1 tsp. extra virgin olive oil
  • 1 Tbsp. fresh dill, chopped
  • Salt and pepper to taste
  • 1 Tbsp. fresh lemon juice

For the Mediterranean Meatballs:

  • 1/4 cup crushed pork rinds
  • 1 large egg
  • 2 Tbsp. chopped Italian parsley
  • 1 Tbsp. minced garlic cloves
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lb. ground beef

For the Cucumber Tomato Salad:

  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup finely diced red onion
  • 1 Tbsp. chopped Italian parsley
  • Salt and pepper to taste

For the Couscous:

  • 1 cup water
  • 1 tsp. unsalted butter
  • 1 cup couscous
  • Juice of 1/2 a lemon
  • Salt and pepper to taste

For Serving:

  • Crumbled feta cheese
  • Chopped Italian parsley

Directions:

  1. For the tzatziki sauce: Combine all the ingredients and stir until combined. Adjust flavors to your liking and then cover and refrigerate until ready to serve.
  2. For the Mediterranean meatballs: Mix together pork rinds and egg together. Then add parsley, garlic, cumin, salt and pepper and combine. Add ground beef and mix until just combined.
  3. Form into walnut sized meatballs and then place onto a foil-lined baking sheet.
  4. Bake in a preheated 425 degree oven for 10 to 15 minutes or until cooked through. Rest for 5 to 10 minutes.
  5. For the cucumber tomato salad:  While the meatballs are cooking, combine ingredients.
  6. For the couscous: While the meatballs are resting, add water, butter, and a little salt to a boil in a medium saucepan.
  7. Add couscous and stir. Cover and remove from heat. Let stand for 4 minutes. Then fluff with a fork. Squeeze lemon juice over the top and season with salt and pepper to taste.
  8. For serving: Divide couscous into 4 bowls, then top with cucumber tomato salad and meatballs. Crumble feta over the top, drizzle with tzatziki sauce, and top with chopped parsley.
