A great twist on macadamia nut cookies with cake mix - perfect for Valentine's Day (or whenever you feel like it)!
If you look through the past almost 10 1/2 years of me blogging, you will find very few red velvet recipes. I have no problem admitting that I know it's just chocolate flavor, but I still don't really care for it. To me, it just tastes like red food coloring and that's a no for me. However, occasionally I will make red velvet treats because my family likes them and occasionally, I will find one that I do actually like (for example, a sheet cake I blogged either last year or the year before - I'll link it near the bottom of this post). I have posted recipes that I didn't care for if the rest of my family liked them. It's definitely harder to describe them if I don't like them, but I'm not really the best at that anyways haha. So fortunately this recipe is one that I did like. I love white chocolate macadamia nut cookies and these were really a nice variation of them. I love cake mix cookies too - they are so chewy and delicious anyways, but a cake mix macadamia nut cookie is just *chef's kiss*What you need:
- 1 1/2 sticks (3/4 cup) butter, chilled
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg
- 2 tsp. vanilla extract
- 1/2 tsp. baking soda
- 1 Tbsp. hot water
- 1 1/4 cups all purpose flour
- 1 1/4 cups red velvet cake mix
- 1/2 cup white chocolate chips
- 1/2 cup macadamia nuts
Directions:
- Beat together butter and sugars until you don't see any more chunky pieces of butter.
- Add egg and vanilla, beat until smooth.
- Dissolve baking soda into hot water, then add to mixture.
- Add flour and cake mix and mix until just combined.
- Stir in white chocolate chips and macadmaia nuts.
- Scoop onto a parchment paper or silicone baking mat lined cookie sheet by the tablespoon. Then add an additional tablespoon of dough on top of those to make tall "balls" of dough. Make sure they are about 2 inches apart.
- Bake in a preheated 350 degree oven for 10 to 13 minutes or until edges are set.
- Cool for 10 minutes and then remove to a wire rack carefully.

As promised, I have to share this Red Velvet Sheet Cake recipe that I shared last year. It has a whipped frosting and a little raspberry with each slice. I think I would really enjoy these Red Velvet Brownies from Palatable Pastime - they look like something that would really work with that red velvet flavor and not be too overpowering.
