Turkey Parmesan Pasta

This amazing 7 ingredient dinner is ready in under 30 minutes and is a one pot meal!

I really love pasta dishes because they are so quick and they are typically easy on the wallet too. I was happy to find this really easy recipe because I have been trying to use more ground turkey than beef. Again, this is a really simple dish to throw together with only 7 ingredients. You may already have many of these on hand. It's a one pot meal - some of my favorites - and it's ready in under 30 minutes.

What you need:

  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 lb. ground turkey
  • 2 cups beef broth
  • 1 can (15 oz) diced tomatoes with Italian spices (or regular diced tomatoes and also add 1 tsp. Italian seasoning)
  • 2 cups whole wheat pasta
  • 3/4 cup shredded Parmesan cheese, divided

Directions:

  1. Saute onion and green bell pepper in a large skillet over medium high heat until softened.
  2. Add ground turkey and cook while crumbling. Drain and remove from skillet to set aside.
  3. Add beef broth, tomatoes, and pasta to now empty skillet.
  4. Bring to a boil, then reduce heat to medium and cover. Cook for 15 minutes or until pasta is tender (stir occasionally).
  5. Add ground turkey and veggies back to the skillet with 1/2 cup Parmesan cheese. Heat through.
  6. Serve topped with remaining Parmesan cheese.
