Baked Spicy Chicken Sandwiches

These chicken sandwiches are as healthy as you'll get with yogurt dipped chicken and baked instead of fried.

I've been struggling with getting things posted on here for the last few months. I hit job hunting really hard and found a full time position that I started last Friday. This is my first full week of work and I'm really excited. However, I now have even less time to do blogging, so I decided to give myself a little grace and not worry about all the extra stuff bloggers **should** be doing to make their blog better for search engines and all that. I'm just going to go back to sharing the recipes I'm making, like I did in the beginning almost 11 years ago. I still want to make them easy to print, but that part doesn't take too long.

That was a long little bit, longer than normal for me - ha! But now let me say something about the recipe today. I think this is the first time I've tried a baked recipe where you mix the dry breading with oil and usually it's buttermilk or milk and eggs for the wet part of the breading, this recipe uses yogurt. So it's overall a healthier way to make fried chicken sandwiches. The breading was so crunchy and crisp and I really loved the honey yogurt slaw!

What you need:

For the Chicken:

  • 1 cup bread crumbs
  • 1/2 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1 tsp. cayenne
  • 1/4 tsp. salt
  • Ground black pepper
  • 3 Tbsp. vegetable oil
  • 1/2 cup plain yogurt (I like Greek)
  • 1/4 tsp. salt
  • 1 Tbsp. hot sauce
  • 2 boneless, skinless chicken breasts
  • 4 hamburgers buns

For the Honey Yogurt Slaw:

  • 3 cups shredded cabbage slaw mix
  • 2 Tbsp. mayonnaise
  • 1/3 cup plain yogurt (again, I used Greek)
  • 1/2 Tbsp. honey
  • 1 tsp. Dijon mustard
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. salt
  • Ground black pepper

Directions:

  1. For the chicken: In a shallow bowl or plate, mix together bread crumbs, garlic, paprika, cayenne, salt, and pepper. Add vegetable oil and mix until it resembles damp sand.
  2. In another shallow bowl, mix together yogurt, salt, and hot sauce.
  3. Pound chicken out to an even thickness under 1-inch thick and cut each piece in half, for 4 total pieces of chicken. Season with salt and a little cayenne.
  4. Dip each piece of chicken into yogurt mixture and then into bread crumbs, pressing gently to adhere coating.
  5. Place on a wire rack on a baking sheet.
  6. Bake in a preheated 425 degree oven for 25 minutes or until fully cooked, flipping chicken halfway through cooking time.
  7. For the slaw: Whisk together mayo, yogurt, honey, mustard, vinegar, salt, and pepper in a small bowl.
  8. Place cabbage in a large bowl and drizzle dressing over the top. Toss to coat.
  9. Build sandwiches with one piece of spicy baked chicken on top of a hamburger bun and topped with honey yogurt slaw and the top bun!
