Philly Cheesesteak Stuffed Peppers

This easy recipe has all the best parts of a cheesesteak inside a bell pepper!

I feel like I've posted a lot of stuffed pepper recipes or have been trying a lot of new stuffed pepper recipes lately and it's because I love them so much. I feel like I have been so lucky and haven't come across any recipes I feel kind of meh towards. They are all delicious. I really love this one in particular because the cheesesteak filling has a few more ingredients than I normally add and really amps up the flavor. I love the slice of provolone that goes on top and gets all gooey and melty! Now that I'm working full time, I've even begun to think of ways to meal prep and this is absolutely one where the filling could be made a head of time and just placed in the peppers and baked then.

What you need:

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 cloves minced garlic
  • 1/2 cup beef broth
  • 1 Tbsp. cornstarch
  • 2 Tbsp. ketchup
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. Montreal steak seasoning
  • 2 large green bell peppers
  • 1 cup beef broth
  • 4 slices provolone cheese

Directions:

  1. In a skillet over medium-high heat, brown and crumble beef with onions. Add garlic and cook for an additional minute.
  2. Mix together 1/2 cup beef broth with cornstarch. Add to beef along with ketchup, Worcestershire sauce, and steak seasoning. Cook for about 3 to 5 minutes or until it thickens a little.
  3. Slice the top off the peppers and cut in half lengthwise. Remove seeds.
  4. Divide beef mixture between peppers and place in a baking dish. Pour 1 cup beef broth into the bottom.
  5. Cover with foil and bake in a preheated 400 degree oven for about 20 minutes.
  6. Uncover and top with slices of provolone cheese. Bake for 10 minutes.
