This meal is made with homemade teriyaki sauce that comes together so quickly and then really shines after some time in the slow cooker.
I don't think I have many Asian-style recipes that I make in the crockpot because most are ones that are stir fry or ramen in nature and come together very quickly. What I love about this one is that it does have that element of quickness with making a homemade teriyaki sauce and then the prep time altogether for the crockpot part of the meal is about done. Just a little bit in the slow cooker and you have this wonderful meal!What you need:
- 1 Tbsp. cornstarch
- 1 Tbsp. room temperature water
- 3 Tbsp. brown sugar
- 1/4 cup honey
- 1/2 cup soy sauce
- 1/4 cup vinegar (rice wine or apple)
- 2 tsp. minced garlic cloves
- 1 to 2 tsp. minced fresh ginger
- 1/2 medium onion, diced
- 4 boneless, skinless chicken breasts
- Sesame seeds, for garnish
- Chopped green onions, for garnish
- Cooked rice, for serving
Directions:
- In a small bowl, combine cornstarch and water and pour into a medium saucepan over medium-low heat.
- Add brown sugar, honey, soy sauce, vinegar, garlic, and ginger. Simmer while whisking.
- Bring to a boil and boil for 1 minute, then remove from heat.
- Place onion and chicken into the slow cooker. Pour sauce over the top.
- Cook on LOW for 5 hours or on HIGH for 3 hours.
- Shred chicken and place back in crockpot. Cook on LOW for 1 additional hour, stirring occasionally.
- Serve on top of cooked rice with sesame seeds and green onions.
