Classic beef and bean burritos with all the fixings - perfect quick weeknight meal!
I love a good easy recipe like this one! I also have to mention that the blog I got it from is one of my favorites. I went to plan the recipes I was sharing this week and realized all three came from the same blog - so this must have been when I had first found it and saved a ton of their recipes. What you need:
- 1 lb. ground beef
- 1 small onion, diced
- 4 to 6 minced garlic cloves
- 1 1/2 tsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. dried oregano
- 1 can (16 oz.) can refried beans
- 1/4 cup sour cream
- 1/2 cup medium salsa
- Hot sauce
- 6 burrito size flour tortillas
- 1 1/2 cups sharp cheddar cheese
- Other fillings or topping ingredients: sour cream, lettuce, diced tomatoes, guacamole, avocado, rice
Directions:
- Cook ground beef and onion in a large skillet over medium heat until ground beef is browned and onion is softened.
- Add garlic and cook for 30 more seconds. Drain if needed.
- Stir in garlic, chili powder, cumin, paprika, salt, pepper, oregano, and refried beans. Mix until combined.
- Then add sour cream and salsa. Heat through.
- Heat tortillas. Top with bean and beef mixture, other fillings, and cheese. Fold burrito style and serve!
