Creamy Chicken Lasagna

Who needs red sauce beef lasagna when you can have chicken lasagna with a rich cream cheese based sauce and spinach!

So my family doesn't like lasagna. None of us do. However, we have been trying white sauce recipes or recipes that utilize cottage cheese instead of ricotta and that seems to have served us well. This particular recipe is white sauce AND cottage cheese. It really reminds me of One Pot Chicken Lasagna Soup that I've posted previously and make quite a bit.

What you need:

For the Cheese Mixture:

  • 2 cups cottage cheese (or ricotta)
  • 2 large eggs
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed and excess liquid squeezed out in paper towels
  • 2 Tbsp. chopped fresh parsley
  • 1/2 tsp. pepper

For the Sauce:

  • 4 Tbsp. unsalted butter
  • 1 cup diced yellow onion
  • 3 cloves minced garlic
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 2 cups milk
  • 1 pkg. (8 oz.) cream cheese, softened and cubed

For the Lasagna: 

  • 12 lasagna noodles, cooked and drained
  • 4 cups chopped, cooked chicken
  • 4 cups shredded mozzarella cheese
  • 2/3 cup shredded Parmesan cheese

Directions:

  1. For the Cheese Mixture: Mix together all ingredients in a medium bowl and set aside.
  2. For the Sauce: Melt butter in a large skillet over medium high heat. Add onion and cook for 3 minutes or until softened.
  3. Add garlic and cook an additional minute.
  4. Add flour and cook while stirring for an additional minute.
  5. Gradually, whisk in chicken broth then milk. Bring to a simmer and let simmer for about 2 minutes to thicken.
  6. Add cream cheese and allow to melt, stirring to help the process along. Remove from heat and season with salt and pepper.
  7. Grease a 9x13-inch pan and spread 1 cup sauce in the bottom.
  8. Top with 4 lasagna noodles. Top with half the cheese mixture and chicken.
  9. Top with 1/3 of remaining sauce, 1/3 of mozzarella, and 1/3 of Parmesan.
  10. Top with another layer of noodles. Add the remaining cheese mixture and chicken.
  11. Top with 1/3 of the sauce, 1/3 of the mozzarella, and 1/3 of the Parmesan.
  12. Top with a final layer of noodles and remaining sauce. Then the rest of the mozzarella and Parmesan.
  13. Spray a piece of aluminum foil and cover the baking dish with it.
  14. Bake, covered, in a preheated 350 degree oven for about 45 minutes.
  15. Uncover and bake for an additional 15 to 20 minutes.
  16. Cool for 10 minutes before slicing.
