Chocolate Crunch Cookies

Rich and chewy chocolate cookies with caramelized Rice Krispies and chopped Crunch bars mixed in!

I have made cookies with Cornflakes before and really enjoyed them but was really psyched to try a chocolate cookie recipe with caramelized Rice Krispies cereal in it. It was every bit as wonderful as I anticipated. The Crunch bar bits were a super nice touch too.

What you need:
For the Caramelized Krispies:

  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 2 cups Rice Krispies cereal
  • Pinch of salt

For the Cookies: 

  • 1 cup unsalted cold butter, cubed
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup cocoa powder
  • 3/4 tsp. baking soda
  • 3/4 tsp. salt
  • 2 1/2 cups all purpose flour
  • 2 cups Nestle "Buncha Crunch" or chopped Nestle Crunch Bars

Directions:

  1. For the Caramelized Krispies: In a medium nonstick skillet, melt butter with sugar over medium heat.
  2. Add cereal and salt and stir to coat. Stir often until cereal is an amber color, about 5 to 10 minutes.
  3. Pour onto a parchment lined baking sheet (or countertop) and allow to cool.
  4. For the Cookies: In a stand mixer, mix together cold butter until smooth, about 1 minute.
  5. Add sugars and mix for 2 minutes or until light and fluffy.
  6. Next add in cocoa powder and mix until combined.
  7. Add eggs, vanilla, baking soda, and salt. Mix for 1 minute.
  8. Turn mixer to low and add flour, mixing until just combined.
  9. Stir in Nestle Crunch and Caramelized Krispies.
  10. Drop dough onto a parchment paper or silicone mat-lined baking sheet.
  11. Bake in a preheated 350 degree oven for 9 to 11 minutes or until edges are set.
  12. Cool for 3 minutes on the baking sheet before moving to a wire rack.
