Rich and chewy chocolate cookies with caramelized Rice Krispies and chopped Crunch bars mixed in!
I have made cookies with Cornflakes before and really enjoyed them but was really psyched to try a chocolate cookie recipe with caramelized Rice Krispies cereal in it. It was every bit as wonderful as I anticipated. The Crunch bar bits were a super nice touch too.
What you need:
For the Caramelized Krispies:
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 2 cups Rice Krispies cereal
- Pinch of salt
For the Cookies:
- 1 cup unsalted cold butter, cubed
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup cocoa powder
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 2 1/2 cups all purpose flour
- 2 cups Nestle "Buncha Crunch" or chopped Nestle Crunch Bars
Directions:
- For the Caramelized Krispies: In a medium nonstick skillet, melt butter with sugar over medium heat.
- Add cereal and salt and stir to coat. Stir often until cereal is an amber color, about 5 to 10 minutes.
- Pour onto a parchment lined baking sheet (or countertop) and allow to cool.
- For the Cookies: In a stand mixer, mix together cold butter until smooth, about 1 minute.
- Add sugars and mix for 2 minutes or until light and fluffy.
- Next add in cocoa powder and mix until combined.
- Add eggs, vanilla, baking soda, and salt. Mix for 1 minute.
- Turn mixer to low and add flour, mixing until just combined.
- Stir in Nestle Crunch and Caramelized Krispies.
- Drop dough onto a parchment paper or silicone mat-lined baking sheet.
- Bake in a preheated 350 degree oven for 9 to 11 minutes or until edges are set.
- Cool for 3 minutes on the baking sheet before moving to a wire rack.
