Butterfinger Butterscotch Cookies

Soft oat cookies with chocolate chips, butterscotch chips, and bits of Butterfinger candy bars.

I know it's a whole thing of people thinking they are getting a chocolate chip cookie and it's oatmeal raisin and they hate it, but I am not one of those people. Well, maybe. I definitely love chocolate chip cookies, but I also love oatmeal raisin too. Now these cookies are like a beautiful mixture of the two plus butterscotch chips and Butterfinger candy bits. What's not to love about that? It reminds me a lot of cowboy cookies or everything but the kitchen sink cookies. With a little patience with the freezing time, you get wonderful cookies!

What you need:

  • 1 1/2 cups all-purpose four
  • 1 cup bread flour
  • 2/3 cup instant oats
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup unsalted butter, cold (2 sticks)
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 cup semisweet, dark, or milk chocolate chips
  • 1 cup butterscotch or peanut butter chips
  • 1 1/2 cups Butterfinger bits (or chopped Butterfinger candy bars)


  1. Beat cold butter until light and creamy in the bowl of a stand mixer.
  2. Add sugars and beat until light and fluffy.
  3. Add eggs, one at a time, beating until each egg is incorporated.
  4. Add vanilla and mix well.
  5. In a separate bowl, mix together flours, oats, baking powder, baking soda, and salt.
  6. Slowly add dry ingredients to wet ingredients and mix until just combined.
  7. Fold in chocolate chips, butterscotch chips, and Butterfinger bits.
  8. With a large cookie scoop or ice cream scoop, scoop large portions of cookie dough onto a silicone mat or parchment paper-lined baking sheet. These can be next to each other for this step.
  9. Freeze cookie dough for 1 hour.
  10. In preparation for baking, place 6 cookies on each baking sheet.
  11. Bake in a preheated 375 degree oven for 15 to 18 minutes or until edges turn golden brown.
  12. Once cookies are finished, place baking sheet on a wire rack and allow cookies to cool completely before removing. Repeat with any remaining dough.
