Greek Chicken Gyros

Flatbreads topped with fresh vegetables, Greek-marinated chicken, and tzatziki

I cannot get enough of anything that includes naan or pita, fresh vegetables, feta, and tzatziki. There is a local food place where I get chicken shwarma and gyro plates all the time and it's my obsession at the moment. I really liked the ease of this recipe where it's really just marinate the chicken and then cook it. Everything else is just chop or scoop and you're good to go. It's such a fresh and bright meal.


What you need:
For the Chicken:

  • 2 lb. boneless, skinless chicken breasts, diced
  • 1/3 cup olive oil
  • 6 cloves minced garlic
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. lemon juice
  • 2 tsp. dried oregano
  • 1 tsp. cumin
  • 1 tsp. dried basil
  • 1 tsp. onion powder
  • 1 tsp. granulated sugar
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. paprika
  • 1 Tbsp. olive oil, for cooking

For Serving: 

  • 4 to 6 flatbreads or pitas
  • 1 1/2 cups chopped romaine lettuce
  • 3 Roma tomatoes, diced
  • 1 cucumber, halved lengthwise and sliced
  • 1/4 red onion, thinly sliced
  • Crumbled feta
  • Tzatziki sauce

Directions:

  1. For the Chicken: Mix together the oil, garlic, vinegar, lemon juice, and all the seasonings in a large zipper bag or bowl.
  2. Add chicken to marinade and let marinate for 4 to 8 hours in the refrigerator.
  3. Add a tablespoon of olive oil in a large skillet over medium high heat.
  4. Drain chicken from marinade and add to skillet. Cook for 3 to 4 minutes, undisturbed.
  5. Flip chicken over and reduce heat to medium. Continue to cook until cooked through.
  6. For serving: Top flatbreads or pitas with lettuce, tomatoes, cucumbers, red onion, chicken, feta, and tzatziki.
