Crockpot Southern Collards

Collard greens cooked low and slow to perfection!

I adore collard greens and I was delighted to find a recipe for the crockpot. My next mission is to find an Instant Pot recipe. I really cannot get enough of them. The low and slow method is the way to go and the flavors were fantastic.

What you need:

  • 1 to 2 bunches collard greens
  • 4 to 8 oz smoked seasoning meat (we used bacon), cooked
  • 1 onion, diced
  • 4 to 5 cloves minced garlic
  • 1 cup vegetable or chicken broth
  • Salt, pepper, and red pepper flakes to taste
  • 1/4 cup vinegar
  • Hot sauce to taste

Directions:

  1. Submerge greens in cold water and let soak for 5 to 10 minutes to remove dirt and debris from them. Rinse and drain. Repeat if needed.
  2. Slice out thick stem and roughly chop. Alternatively, prerinsed chopped greens may be used.
  3. Place in crockpot with rest of ingredients.
  4. Cover and cook on LOW for 8 hours until greens are tender. You may have to stir occasionally.
