Collard greens cooked low and slow to perfection!
I adore collard greens and I was delighted to find a recipe for the crockpot. My next mission is to find an Instant Pot recipe. I really cannot get enough of them. The low and slow method is the way to go and the flavors were fantastic.
What you need:
- 1 to 2 bunches collard greens
- 4 to 8 oz smoked seasoning meat (we used bacon), cooked
- 1 onion, diced
- 4 to 5 cloves minced garlic
- 1 cup vegetable or chicken broth
- Salt, pepper, and red pepper flakes to taste
- 1/4 cup vinegar
- Hot sauce to taste
Directions:
- Submerge greens in cold water and let soak for 5 to 10 minutes to remove dirt and debris from them. Rinse and drain. Repeat if needed.
- Slice out thick stem and roughly chop. Alternatively, prerinsed chopped greens may be used.
- Place in crockpot with rest of ingredients.
- Cover and cook on LOW for 8 hours until greens are tender. You may have to stir occasionally.
