A lovely cake made with rich Bock beer and butterscotch!
I'm a little embarrassed that I'm posting recipes from nearly 3 years ago, but here we are. This cake was made for my husband, Nick, for his birthday in May 2020. He loves butterscotch - it's one of his favorite sweets. He enjoys beer and does like a Bock occasionally. I thought it would make for the perfect birthday cake. I personally did not anticipate liking this cake at all because I'm not a fan of beer, but I was pleasantly surprised. It had such a wonderful balance of the more savory beer flavor with the sweetness of the cake base and butterscotch. The glaze was magnificent. It's very much like a rum cake! What you need:
For the Cake:
- 2 1/2 cups all purpose flour
- 1 Tbsp. cornstarch
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 cup salted butter (2 sticks), at room temperature
- 2 cups granulated sugar
- 1 tsp. vanilla
- 5 eggs, at room temperature
- 1/4 cup sour cream, at room temperature
- 3/4 cup Shiner Bock
- Heaping 1/2 cup butterscotch chips
For the Glaze:
- 1 lb. powdered sugar
- 5 Tbsp. reserved beer
- 1 tsp. vanilla
- Pinch of salt
Directions:
- For the cake: Whisk together flour, cornstarch, baking powder, and salt. Set aside.
- With a stand mixer, cream together butter and sugar until light and fluffy.
- Add vanilla and mix.
- Add eggs, one at a time, stirring until incorporated.
- Add sour cream and mix.
- Alternate adding the flour mixture and beer. Start and end with flour mixture - add flour in 3 additions and beer in 2. Mix each time until just combined.
- Fold in butterscotch chips.
- Pour into greased and floured Bundt pan.
- Bake in a preheated 325 degree oven for 55 to 60 minutes or until a toothpick inserted in the middle comes out mostly clean.
- Remove from oven and cool in pan on a wire rack for 5 minutes.
- After 5 minutes, place another wire rack over the top of the Bundt cake and flip to remove from pan. Cool completely.
- For the glaze: Whisk together all ingredients.
- Spoon glaze over cake and let set for 15 minutes before serving.
