Peanut Butter Criss Crosses

You can't go wrong with classic peanut butter cookies!

Every once in a while, I really love a good classic peanut butter cookie. I'm not sure honestly what else can be said about these. They are pure nostalgia!

What you need:

  • 1 1/4 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • Pinch of salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • Extra granulated sugar for rolling

Directions:

  1. Whisk together flour, baking soda, baking powder, and salt. Set aside.
  2. In a mixer, beat butter until smooth and creamy. Add peanut butter and beat for 1 minute.
  3. Add both sugars and beat for an additional 3 minutes. Scrape sides as needed.
  4. Add egg and vanilla. Beat until just combined.
  5. With mixer on low, add dry ingredients gradually and mix until just combined.
  6. In a small bowl, pour a little granulated sugar into it.
  7. Roll dough into tablespoon sized balls and then roll in sugar to coat.
  8. Place on a silicone mat or parchment paper-lined baking sheet about 2 inches apart.
  9. Press a fork on each ball to press down and then turn and press down again to make a criss cross pattern.
  10. Bake in a preheated 350 degree oven for about 10 minutes or until golden brown.
  11. Cool on baking sheet for a few minutes and then remove to a wire rack to cool completely.
