Broccoli & Ham Frittata

This frittata made me actually enjoy my morning. I'm one of those "the second mouse gets the cheese" people. I don't do mornings. I am especially awful at making actual meals for breakfast. I ate half of the frittata by myself, which is saying something for my virtually nonexistent morning appetite.

What you need:
  • 3 whole eggs
  • 3 egg whites
  • 1/4 cup half and half
  • 1/2 cup chopped broccoli, I used about a cup if not more
  • 1 large baking potato, peeled and grated
  • 1 cup diced ham
  • 4 oz. cream cheese
  • 1 tsp. minced onion
  • 1 tsp. garlic powder
  • 1 tbsp. olive oil
  • 1/4 cup cheddar cheese, I probably used more
Directions:
Beat together eggs, egg whites, and half and half.

In a skillet, add olive oil and potato. Once it is heated up, add onion and garlic. Cook for 10 minutes.

Add broccoli,  ham, cream cheese and half the cheddar cheese. Let cook until cheese melts.

Pour broccoli mixture into a greased 9-inch pie pan and add egg mixture on top.
Bake in a preheated 375 oven for 20 to 25 minutes.
Add remaining cheese on top and cook for about 5 more minutes until cheese has melted.
