Creamy Taco Mac

I thoroughly enjoy when "creamy" in a recipe's title means cream cheese and sour cream. Those two ingredients are just plain magical. They also didn't bland the seasoning down, but rather paired perfectly and brought out those flavors! It's also made with turkey instead of beef.

Creamy Taco Mac - a smooth, rich pasta dish that can be made in under 30 minutes.

What you need:
  • 8 oz. pasta
  • 1 1/4 lb. turkey
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 can (14 oz.) diced tomatoes, darined
  • 4 Tbsp. taco seasoning
  • 3 oz. cream cheese
  • 1/2 cup sour cream
  • Shredded cheddar cheese
Directions:
  1. Cook and drain pasta - reserving 1/2 cup pasta water.
  2. Brown turkey over medium heat and then add onion, cooking until tender.
  3. Add garlic and cook for 30 more seconds.
  4. Add tomatoes and taco seasoning. Simmer for 5 minutes.
  5. Reduce heat to medium low and add cream cheese, sour cream, and salt and pepper, to taste. Cook for 3 to 5 minutes.
  6. Top with cheddar cheese and serve.
