Bacon Chicken Avocado Club Sandwich with Garlic-Basil Mayo

When I saw this recipe, I didn't realize how incredible it would end up being. I was thinking it would be a run-of-the-mill, basic club sandwich. I was so wrong. The garlic-basil mayonnaise is the best mayonnaise I've ever had and it was a great addition to the sandwich and all its different flavors - like the salty bacon, juicy tomato, crunchy lettuce, and the bite of the onion. I also seasoned my chicken with lemon pepper. I only wish that my avocado hadn't gone bad by the time I made the sandwich because I know the creamy avocado would have been amazing on this club sandwich.

What you need:
Garlic-Basil Mayonnaise:
  • 1/2 cup mayonnaise
  • 3 garlic cloves
  • 6 basil leaves
  • Salt and pepper
Sandwich:
  • 3 to 4 thin chicken breasts, grilled
  • 8 slices good-quality bread, toasted
  • 4 slices cheese of your choice
  • 8 slices bacon, cooked and cooled
  • 2 avocados, sliced
  • 1 tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • Lettuce
Directions:
  1. Mix together the mayonnaise ingredients and refrigerate for a few hours prior to let the flavors marry.
  2. Build your sandwich with all the ingredients and a bit of the garlic-basil mayo.
