Hawaiian Ham Quesadillas

I never expected to be blown away by these quesadillas. Pineapple and ham is a great combination, but I think I've only had it on pizza. These were out of this world scrumptious, delicious, and all kinds of other -ious words. I made them with mini tortillas and NOT in my GF grill like I did with yesterday's quesadillas, so you can see all the yummy filling! Very simple ingredients, but a very complex flavorful meal!

What you need:
  • 8 oz. cream cheese, room temp
  • 1 cup mozzarella cheese
  • 3 green onions, chopped
  • 1/8 tsp. red pepper flakes
  • 1 can pineapple chunks, drained and chopped
  • 1/2 lb. ham, chopped
  • Flour tortillas (we used mini)
Directions:
Spread cream cheese on one tortilla.
Top with mozzarella, some green onions, a sprinkle of red pepper flakes, pineapple, and ham.

Top with a second tortilla and cook in a skillet until both sides are browned and cheese has melted.

*If you use full size tortillas, I suggest doing one tortilla and folding it in half.
