Texas Steak Hash

Texas Steak Hash | Don't miss out on this incredibly tasty combination of steak, potatoes, fried egg, and more!

Watching Diners, Drive-ins, and Dives always makes me so hungry. It makes me sad when the food I see is a top secret recipe that I'll probably never taste unless I go on a food road trip. I saw a recipe for Texas Chicken Hash and was so stoked.

Then I realized the recipe on the site could feed a small army and that was a "Woah! I'm probably not going to make this!" reaction out of me. Then I decided to try and modify as much as possible and I had steak instead of chicken. It ended up being one of the very best meals I've ever had.

There was a lot going on and it did dirty a ton of dishes, but it was definitely worth it.

Also worth a mention - I feel like this would be perfect hangover food...just for reference!

What you need:
  • Steak
  • Chili powder
  • Garlic powder
  • Pepper
  • 3 large Idaho potatoes, cubed
  • 1/2 stick butter
  • 2 green bell peppers, cut into strips
  • 1 onion, diced
  • 8 flour tortillas
  • 1/4 cup butter
  • 1/2 cup flour
  • 1 1/2 cups milk
  • 1/2 habanero, finely diced
  • 1 red bell pepper, finely diced
  • 2 cups cheddar cheese
  • 4 to 8 eggs [depending on if the person wants 1 or 2]
  • Tomato, diced, for garnish
  • Avocado, diced, for garnish
Directions:
 
Season steak with chili powder, garlic powder, and pepper. 
Sear to desired doneness and slice into strips.
Fry potatoes in a skillet in the 1/2 stick butter - season with salt and pepper. Remove and keep warm.
In the same pan, cook green bell peppers and onion until onions are translucent.
Fry tortillas until golden brown.

Melt 1/4 cup butter in a medium saucepan. Add flour slowly and stir until smooth. Cook for 5 minutes, stirring constantly.Slowly add milk and cook until thick. Add habanero and red bell pepper. Stir in cheddar cheese.

Fry up eggs - hard or soft yolk, doesn't matter as long as it's what you want!
Reheat up steak, potatoes, and pepper/onion mixture together, if needed. Season again, to taste.

On each plate, serve 2 tortillas topped with steak mixture and then fried egg(s). Drizzle with cheese sauce. Garnish with tomatoes and avocado.
