Sausage & Pepper Fettuccine Skillet

This quick dish features kielbasa, sweet bell peppers, bursts of grape tomatoes, and pasta with a savory alfredo-like sauce.

This skillet recipe is almost made in just one pot - the pasta cooks separately. But I can totally forgive it because it's such a quick recipe to make and I love that it is so colorful. It's got a sauce that is pretty similar to an alfredo sauce and the bursts of tomato are amazing.

What you need:
  • 8 to 12 oz. fettuccine
  • 2 sweet peppers (any color), seeded and diced
  • 1 medium onion, diced 
  • 16 oz. smoked sausage, sliced
  • 1/2 cup halved cherry tomatoes
  • 1/3 cup chopped parsley
  • 3/4 cup heavy cream
  • 1 cup pasta water
  • 2 tsp. chicken bouillon
  • 1 Tbsp. minced garlic
  • Olive oil
Directions:
  1. Cook pasta in boiling water according to package directions until al dente.
  2. In a large skillet over medium-high heat, add a few tablespoons of oil.
  3. Add pepper, onion, tomatoes, and sausage and cook for a few minutes until slightly browned. 
  4. Add pasta water with bouillon and cream to skillet.
  5. Add pasta, parsley, and garlic. Stir to combine and simmer over medium heat until sauce thickens.
  6. Salt and pepper, if needed. Serve!
