Slow cooked savory herb and Parmesan pork roast that gets topped in a sweet honey glaze.
Since having Mason, we have made this two or three more times when we get the craving for pork roast and each time, I had failed to get a good picture of it. I finally got one last time we made it and was so happy to finally be able to share the recipe (pretty much 3 years after the first time I had it since my baby is now 3 as of the 24th - what?!). I have never been a fan of honey, but with recipes like this one, it's really growing on me.

What you need:
- 3 to 4 lb. boneless pork loin
- 2/3 cup shredded Parmesan cheese
- 1/2 cup honey
- 3 Tbsp. soy sauce
- 1 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 2 Tbsp. minced garlic cloves
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 2 Tbsp. cornstarch
- 1/4 cup chicken broth
- 1 tsp. sugar, optional
- Add roast to slow cooker.
- In a bowl, mix together cheese, honey, soy sauce, basil, oregano, garlic, oil, and salt.
- Pour over the roast.
- Cover and cook on LOW for 5 to 6 hours.
- Remove pork loin to a platter and strain juices in crockpot into a saucepan.
- Stir together cornstarch and chicken broth in a bowl. Add to saucepan and heat over medium until thickened.
- If desired, add sugar to sweeten.
- Slice pork and serve topped with glaze.
