Good morning! This week has definitely been super long for me. I am now 3 weeks post-ablation (coming up on a month in a few days) and I am 2 weeks out from being diagnosed with a pulmonary embolism. All the anxiety I had with my heart stuff isn't so bad now and is replaced with anxiety with having a PE. Any ache or pain makes me nervous. I went into the ER on Monday evening with back pain - it was just muscle pain. I went into the ER on Tuesday evening because I hit my head on a windowsill and I'm on blood thinners - but I don't have any residual pain or symptoms, so a brain bleed is unlikely. I always end up with symptoms at night and that means a trip to the ER. I'm there for hours which means I end up feeling super exhausted the next day. Tell me how your week was! Today's recipe is a fairly simple one that I really love. The chicken is coated in breadcrumbs and gets wonderfully crunchy in the oven and would be fantastic on its own. However, the bruschetta topping is something else. It's on a whole other level. It's got the perfect flavors to go with the crunchy chicken. The juiciness from the tomatoes is just what this dish needs. I love the little bite from the balsamic vinegar too.

What you need:
  • 1/2 cup all purpose flour
  • 3 eggs, lightly beaten
  • 1/4 cup shredded Parmesan
  • 1/3 cup Italian breadcrumbs
  • 2 lb. boneless skinless chicken breasts
  • 1 Tbsp. unsalted butter, melted
  • 1 1/2 cups roma tomatoes, diced 
  • 1 tsp. minced garlic cloves
  • 1 Tbsp. EVOO
  • 2 Tbsp. shredded Parmesan
  • 2 Tbsp. fresh basil leaves, finely chopped
  • 1 Tbsp. balsamic vinegar
  • Salt and pepper, to taste
Directions:
  1. Place flour into a shallow dish and eggs in a shallow bowl.
  2. Mix together 1/4 cup Parmesan with bread crumbs and place in a shallow dish. 
  3. Dredge chicken through flour, followed by eggs, and then Parmesan mixture.
  4. Place chicken on a greased 9x13-inch baking pan.
  5. Once all chicken is in the pan, pour melted butter over the top.
  6. Bake in a preheated 375 degree oven for 30 minutes or until chicken is cooked through.
  7. Meanwhile, mix tomatoes, garlic, olive oil, Parmesan, basil, balsamic vinegar, salt, and pepper together in a bowl.
  8. Serve chicken topped with tomato mixture.
