German Cheese Soup

This beer cheese soup with brats is total comfort food for a chilly day.

Just when I finally think that Tennessee has decided to warm up, there is a cold front coming through and it's going to be chilly again. Hopefully, it's a short-lived cold front and spring will more or less arrive with no going back to all this cold weather. Today is Soup Night for us and while we're not having this German Cheese Soup, it's definitely a great pick for those who are still having some cold and chilly nights. I'm not much of a beer drinker, but I love beer with cheese. It's such a perfect pairing. This cheese soup was also made better by the addition of brats. Nothing is better than beer, cheese, and brats together!

What you need:
  • 2 Tbsp. olive oil
  • 2 Tbsp. unsalted butter
  • 1 medium onion, diced
  • 2/3 cup diced carrots
  • 2/3 cup diced potatoes
  • 1/3 cup all-purpose flour
  • 1 1/2 cups beer (we went with Blue Moon)
  • 1 cup milk
  • 2 1/2 cups chicken broth
  • 4 bratwurst sausages, cooked, halved and sliced
  • 3 cups shredded sharp cheddar cheese 
  • 1 tsp. ground black pepper
  • Salt, to taste
Directions:
  1. In a large stockpot, heat olive oil and butter over medium heat.
  2. Add onion, carrots, and potatoes to the pot and saute until tender.
  3. Add flour and stir well.
  4. Whisk in beer, milk, and chicken broth.
  5. Bring to a slow simmer and let thicken, stirring often, for about 10 minutes.
  6. Add bratwursts and cheese. Stir. Season with pepper and add salt to taste.
  7. Heat over medium low heat for 5 minutes.

This Loaded Baked Potato Soup is sans-beer and brats, but does have cheese and lots of other goodies in it. I had to share this Hefeweizen Beer Cheese Dip from Craft Beer because although I don't really care for beer, hefs are definitely my favorite.
