A lovely no-bake dessert with loads of chocolate and caramel - sure to please a crowd!
I am not a fan of pie. Really it's not so much that I don't like pie as much as I don't like pie crust. I tolerate pumpkin pie because I'll eat the bottom of the crust and leave the edges alone. But otherwise, pie is just not my thing. I do love a pie like this Snickers Cheesecake Pie because it uses graham crackers for the crust. No hate for graham cracker crust. Graham cracker crust is the bomb. This particular dessert was definitely bound to be a favorite because it has my OG favorite candy bar, Snickers. It's a wonderful no-bake dessert - hope you guys try it out!

What you need:
For the crust:
- 7 chocolate graham crackers
- 4 Tbsp. unsalted butter, melted
- 4 Tbsp. fudge topping
- 3 Tbsp. caramel sauce, for drizzle
- 12 oz. neufchatel cheese
- 1 cup powdered sugar
- 1/2 cup creamy peanut butter
- 1 tsp. vanilla extract
- 2 full-size Snickers candy bars, chopped
- 1 container (8 oz) Cool Whip
- Caramel sauce, for topping
- 1/2 full-size Snickers candy bar, for topping (optional)
- Grease a 9-inch deep dish pie plate.
- Place graham crackers in a food processor and pulse until finely crushed.
- Add melted butter and fudge topping. Pulse until blended.
- Press mixture into the bottom of the pie plate.
- Drizzle with caramel and refrigerate while you make the filling.
- In a stand mixer, beat together neufchatel cheese and powdered sugar until creamy.
- Add peanut butter and vanilla and beat until well combined.
- Stir in chopped Snickers. Then fold in Cool Whip making sure to not overstir.
- Pour filling into chilled crust.
- Drizzle with caramel and top with chopped Snickers, if desired.
- Refrigerate for 4 hours or until set.
