Creamy Tuscan Garlic Chicken

This Creamy Tuscan Garlic Chicken reminds me of an old Olive Garden menu item but is quick and easy to make at home!

Many years ago, we tried a copycat Olive Garden recipe that this chicken recipe reminds me of. I think it's called Tuscan Garlic Chicken or Garlic Tuscan Chicken, but regardless, it is much more time-consuming to make than this recipe. So I was overjoyed to find it and that it is a pretty decent stand-in for that recipe. I honestly can say that I really wouldn't miss making the copycat again because this recipe tastes so much like it and is way easier. The sauce is doubled in the recipe below because I did serve mine over pasta and you definitely need double the sauce (which I did not do in the picture above).

What you need:
  • 1 1/2 lb. thinly sliced chicken breasts
  • 2 Tbsp. olive oil
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 2 tsp. garlic powder
  • 2 tsp. Italian seasoning
  • 1 cup Parmesan cheese
  • 2 cups chopped spinach
  • 1/2 cup sundried tomatoes
Directions:
  1. Heat olive oil in a large skillet over medium-high heat. 
  2. Add chicken to skillet and cook for 3 to 5 minutes on each side until browned and cooked through. Then set aside.
  3. In the same skillet over medium-high heat, add heavy cream, chicken broth, garlic powder, Italian seasoning, and Parmesan cheese. Whisk until it begins to thicken up.
  4. Add spinach and sundried tomatoes and simmer until spinach wilts.
  5. Add chicken to pan to heat through, if needed.
  6. Serve over cooked pasta, if desired.
