This stir fry is quick and easy and so full of flavor!
Stir frys are such great quick meals on busy nights. I was looking forward to trying another stir fry with cashews. This one was quick and really flavorful too. Not much else to say about it :)

What you need:
- 1/4 cup soy sauce
- 3 cloves minced garlic
- 3 Tbsp. brown sugar
- 1 tsp. vegetable oil
- 1 lb. chicken, cut into bite size pieces
- 3/4 cup chicken broth, divided
- 1 tsp. cornstarch
- 3 cups fresh broccoli florets
- 1 cup cashews
- Green onions, diced
- Cooked rice, for serving
- Whisk together soy sauce, garlic, brown sugar, and vegetable oil in a small bowl.
- Add chicken in a skillet over medium-high heat. Pour sauce over the top and cook until chicken is no longer pink.
- In a small bowl, whisk together 1/4 cup chicken broth and cornstarch. Set aside.
- Add 1/2 cup chicken broth with broccoli and cashews into the skillet with the chicken.
- Cover and cook for 3 to 5 minutes or until broccoli is tender.
- Add cornstarch mixture and let simmer, uncovered, until sauce thickens.
- Serve over rice topped with green onions.
