Banana Pudding Cheesecake

Two already amazing desserts on their own get combined to make one supremely delicious, extra fantastic dessert

I'm excited to share this cheesecake with y'all today because it's two desserts in one and those are the best! I have some weird preferences in foods. You will never ever see me eating a banana by itself. I hate the texture a lot. But I adore pretty much any kind of banana food that isn't just a banana by itself. I somehow am okay with small slices of banana, so I love banana pudding! This cheesecake is made with banana pudding mix and you can do fresh bananas on top for serving. I love the bits of vanilla wafers throughout the cheesecake. It's a really easy cheesecake recipe to make and you get banana pudding and cheesecake at the same time, so everyone wins!

(Print)
What you need:
  • 1 extra large graham cracker crust (the one with 2 extra servings)
  • 2 pkg (8 oz each) cream cheese, softened to room temperature
  • 1 box (3.4 oz) banana cream instant pudding
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 15 vanilla wafers, chopped
  • Sliced banana
  • Whipped cream
  • Whole vanilla wafers
Directions:
  1. In a stand mixer, combine cream cheese and sugar until smooth.
  2. Add eggs and mix until combined. Don't overmix.
  3. Add pudding mix and mix until just combined. Scrape sides as needed.
  4. Fold chopped vanilla wafers into the batter.
  5. Pour batter into crust and smooth to even out.
  6. Bake in a preheated 300 degree oven for 55 to 60 minutes.
  7. Allow to cool to room temperature, then cool for several hours in the refrigerator.
  8. Optional: top with sliced bananas, whipped cream, and whole vanilla wafers.

I love when banana bread and another sweet treat are combined too and that is the case with this Banana Bread Coffee Cake from Crazy For Crust. But wait, I have another banana pudding treat that is not banana pudding....Banana Pudding Pancakes. That's right, I went there! They are the best :)
