Buttermilk Fried Chicken Sandwiches

This sandwich is better than any fast food fried chicken sandwich out there!


This sandwich was one that my daughter chose from a cookbook she got as a present. I let her do the work with some supervision and she made the best fried chicken sandwich I've ever had. The seasoning in the breading was perfect and anything that is close to tzatziki is going to be an absolute winner in my book. I don't think I've ever used boneless chicken thighs before, but they are the perfect size to fit on a bun, so I see them being used a lot in the future.

What you need:

For the Buttermilk Marinade:

  • 2 cups buttermilk
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 tsp. cayenne
  • 8 boneless, skinless chicken thighs

For the Dill Dressing:

  • 1 1/2 cup plain Greek yogurt
  • 3 Tbsp. fresh dill, chopped
  • 1 tsp. garlic powder
  • 2 Tbsp. lemon juice
  • 1/4 cup shredded Parmesan cheese

For the Seasoned Flour:

  • 2 cups all purpose flour
  • 1 Tbsp. salt
  • 2 tsp. black pepper
  • 1 1/2 tsp. cayenne
  • 1 Tbsp. garlic powder
  • Peanut or vegetable oil for frying

For Serving:

  • Softened butter
  • 8 brioche burger buns
  • Butter lettuce
  • 2 tomatoes, sliced

Directions:

  1. For the Buttermilk Marinade: In a medium bowl, combine all marinade ingredients. Add chicken thighs and marinade for at least 1 hour in the refrigerator.
  2. For the Dill Dressing: In a small bowl, combine all ingredients. Chill in refrigerator for at least 1 hour.
  3. For the Seasoned Flour: In a medium bowl, combine all ingredients.
  4. Dip marinated chicken in flour mixture.
  5. Fry in a deep fryer or a deep pot that has oil preheated to 350 degrees. Cook for about 7 minutes or until cooked through. Drain on a paper-towel-lined plate.
  6. Spread butter onto buns and toast in a skillet over medium to medium-low heat.
  7. Top toasted buns with lettuce, fried chicken, tomato slices, and dill dressing.

It has been so long since I posted a chicken sandwich recipe, but the Slow Cooker Ranch Bacon Chicken was definitely a great recipe! I don't even know if Popeye's is doing the chicken sandwich anymore, but I like to do copycat recipes at home. I want to try this DIY Popeyes Chicken Sandwich from Gimme Delicious.
