Triple Peanut Butter Cookie Pie

This pie is like a giant peanut butter cookie with more peanut butter treats inside!

I don't really care for pie, but if it's a pie that's actually a cookie...sign me up! I knew this would be a keeper and I knew I would love this recipe and I was right. The base is a peanut butter cookie and then you stuff in mini Reese's cups and peanut or peanut butter M&Ms inside before baking. It's great on its own and it would be great with a scoop of ice cream on top.

What you need:
  • 1/2 cup unsalted butter, melted, slightly cooled
  • 1 large egg
  • 1 cup brown sugar
  • 1 Tbsp. vanilla extract
  • heaping 1/3 cup creamy peanut butter
  • 1 cup all-purpose flour
  • Pinch of salt
  • 12 to 14 mini peanut butter cups
  • 2/3 cup peanut or peanut butter M&Ms
Directions:
  1. In a large bowl, whisk together butter with egg, brown sugar, peanut butter, and vanilla. (I usually add the sugar first and then the egg to prevent any accidental scrambled eggs)
  2. Add flour and salt and stir until just combined.
  3. Pour into a greased 9-inch pie dish and even out the top gently.
  4. Place peanut butter cups into batter, pressing gently until tops are flush with batter (or pretty much).
  5. Place M&Ms into batter, pressing gently.
  6. Bake in a preheated 350 degree oven for 28 to 30 minutes or until a toothpick inserted into the center comes out nearly clean.
  7. Cool at room temperature for about 30 minutes before serving.
