This hasselback style chicken is stuffed with cheese, jalapenos, and bacon and is complete perfection!
Back when my husband and I were first married, we ate jalapeno poppers on Friday nights often. For whatever reason, I cannot find the cheddar cheese kind anymore and it drives me banana sandwich because they are the best kind. So I have tons of recipes on the blog that involve jalapenos and cheese. I love that there is no butterflying or trying to pound the chicken out thin and rolling it up. Hasselback is the way to go.
What you need:
- 4 skinless, boneless chicken breasts
- Salt and pepper
- 6 oz. cream cheese, softened
- 1/2 cup shredded mozzarella
- 1/2 cup shredded cheddar
- 2 cloves minced garlic
- 4 slices bacon, cut into 2-inch pieces (20 pieces total)
- 3 jalapenos, thinly sliced
Directions:
- In each chicken breast, make 5 slices into it that don't go all the way through. Transfer to a foil-lined baking sheet and season with salt and pepper.
- In a medium bowl, stir together cream cheese, mozzarella, cheddar, and garlic. Season with salt and pepper to taste.
- Stuff each slice with a piece of bacon, cheese mixture, and some jalapeno slices.
- Bake in a preheated 400 degree oven for about 25 minutes or until chicken is cooked through.
I'm no stranger to jalapeno popper recipes and have lots of them on my blog. I love this Jalapeno Popper Pizza recipe because it's so simple to make and has all the elements of a jalapeno popper. The Crumby Kitchen shared this Grilled Jalapeno Popper Tuna Melt recipe and I have tried it and LOVED it! Highly recommend!
