Snickers Chex Mix

Chex Mix with chocolate and caramel drizzles, Snickers bits, and peanuts - all the sweet and saltiness you want in a snack!

I'll be honest and say that I think that this is the best Chex mix I've ever had. I love a sweet and salty combo which is probably why I like Snickers so much. This Chex mix is supposed to be chocolate Chex based, but unfortunately we didn't have that so I used plain Chex. For as good as this recipe was with plain Chex, I can only imagine how amazing it is with chocolate Chex. This recipe has a chocolate drizzle, a caramel drizzle, Snickers bits, and peanuts. It's exactly what you'd want in a sweet Chex mix.

What you need:

  • 8 cups Chocolate or plain Chex cereal
  • 3/4 cup brown sugar
  • 6 Tbsp. unsalted butter
  • 3 Tbsp. light corn syrup
  • 1/4 tsp. baking soda
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup caramel bits (or diced caramel squares)
  • 1 Tbsp. heavy cream
  • 3/4 cup salted peanuts
  • 1/2 cup chopped Snickers bars

Directions:

  1. Line a large baking sheet with parchment paper and place cereal into a large microwave-safe bowl.
  2. In a smaller microwave-safe bowl, add brown sugar, butter, and corn syrup. Microwave for 2 minutes, stirring after 1 minute. Mix well.
  3. Add baking soda and stir well. Pour over cereal and stir to coat.
  4. Microwave cereal for 3 minutes, stirring after each minute.
  5. Pour onto baking sheet and let cool for 15 minutes. Then break into bite-size pieces.
  6. In a microwave-safe bowl, add chocolate chips and microwave for 30 second increments, stirring until smooth. Drizzle over the top of the cereal.
  7. In a microwave-safe bowl, add caramel bits and heavy cream. Microwave for 1 minute, stirring after 30 seconds. Stir until smooth then drizzle over cereal.
  8. Sprinkle peanuts and chopped Snickers over cereal while caramel and chocolate are still warm.
  9. Chill in refrigerator until chocolate and caramel sets some and then break apart into bite-size pieces.
