This chicken is slow cooked in homemade bbq sauce that is sweet and smokey with a little bite of vinegar!
I'm down for bbq sandwiches any time and I like to try out different recipes because there are so many styles of barbecue sauce out there. I believe this is closer to a Kansas City style bbq with its sweetness. But I do love the smokey flavor added by the molasses. I personally want coleslaw on any bbq sandwich, so I just whipped up some with prepared coleslaw dressing and premade cabbage mix. What you need:
- 3 lb. boneless, skinless chicken breasts
- 1 cup ketchup
- 1/3 cup molasses
- 1/3 cup brown sugar
- 3 Tbsp. cider vinegar
- 1 Tbsp. Worcestershire sauce
- 1 tsp. smoked paprika
- 1 tsp. chili powder
- 1 tsp. onion powder
- 1/2 tsp. salt
- 2 tsp. liquid smoke
- 2 Tbsp. water
- 1 Tbsp. cornstarch
Directions:
- Place chicken in slow cooker.
- In a medium bowl, whisk together remainder of ingredients except water and cornstarch until combined.
- Pour sauce over chicken and cook on LOW for 4 to 6 hour or on HIGH for 3 to 4 hours until chicken is easily shredded with two forks.
- Mix together water and cornstarch. Add to sauce in crockpot along with shredded chicken.
- Cook for 30 more minutes on LOW.
- Serve on top of hamburger buns with coleslaw, if desired.
