Extra cheesy one pot skillet meal that is so easy to throw together and is a crowd pleaser!
I think it's wild that I didn't like kielbasa years ago. It's one of my favorite things. I typically will buy turkey sausage and I'm not sure if that counts for kielbasa but I do like both. I really loved how easy this recipe was - it really reminded me of something I would have made when I was first married. I made a lot of easy skillet meals or casseroles and this was very much that.What you need:
- 1/2 Tbsp. olive oil
- 1 to 2 pkg. kielbasa, sliced
- 1 small onion, diced
- 1 small green bell pepper, diced
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 2 cloves minced garlic
- 1 cup white rice, uncooked
- 2 cups chicken broth
- 2 cups broccoli florets
- 2 cups shredded cheddar cheese
Directions:
- In a large skillet, heat oil over medium heat. Add kielbasa and brown on each side. Remove from pan with a slotted spoon.
- Add onion and bell pepper and cook until onion is translucent. Add garlic and cook for 1 more minute. Season with salt and pepper.
- Stir rice in and continue stirring while cooking for about 2 minutes.
- Add chicken broth and bring to a boil. Reduce heat to low. Cover and cook for about 15 minutes.
- Add broccoli on top of rice without stirring and cover. Cook for 5 to 7 more minutes or until rice is tender.
- Stir in kielbasa and 1 cup of cheese. Then top with remaining 1 cup of cheese. Cover and let sit for about 3 minutes or until cheese melts.
