S'mores Baked Donuts

These baked donuts are double glazed and then topped with marshmallows and graham crackers!

I could have sworn that I have made s'mores donuts before, but apparently not. I always forget how easy and quick donuts are to make and so I was really excited about these and they did not disappoint. They have a white glaze, then a chocolate glaze, then marshmallow topping, and graham cracker crumbs. Seriously...these are so good!

What you need:
For the Donuts:

  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 cup buttermilk
  • 2 eggs, slightly beaten
  • 2 Tbsp. unsalted butter, melted

For the White Glaze:

  • 2 cups powdered sugar
  • 3 Tbsp. milk
  • 1/4 tsp. vanilla

For the Chocolate Glaze:

  • 1 cup dark cocoa candy melts

For the Marshmallow Topping:

  • 1/2 cup marshmallow fluff

For the Decorations:

  • 1/4 cup crushed graham crackers

Directions:

  1. For the Donuts: In a large bowl, whisk together flour, sugar, baking powder, nutmeg, cinnamon, and salt.
  2. Add buttermilk, eggs, and butter. Stir until just mixed.
  3. Fill a greased donut pan about 2/3rd way full.
  4. Bake in a preheated 425 degree oven for about 8 minutes or until tops bounce back when pressed.
  5. Let rest in pan for 5 minutes. Remove from the pan and set on a cooling rack.
  6. For the White Glaze: Combine ingredients and stir until smooth. Dip the top of each donut in glaze.
  7. For the Chocolate Glaze: While the glaze sets up, make the chocolate glaze by melting dark cocoa candy melts in the microwave for 30 second increments, stirring after each heating until smooth. Let cool for 2 to 3 minutes. Dip top of each donut in chocolate glaze.
  8. For the Marshmallow Topping: While the chocolate glaze sets up, heat the marshmallow fluff for 30 second increments until melted, stirring after each heating.
  9. Place into a zipper baggie and snip a corner off. Pipe over the top of the donuts.
  10. Before the marshmallow sets, top with crushed graham crackers.
