Giant Reese's Peanut Butter Cookie

When you're craving cookies but just one, but maybe more than one, make a GIANT cookie just for you!

Desserts for one/two are some of my favorites because I've been known to slam some cookies and having fewer in the house is better. Because I will eat way too many cookies. I wish I had thought to post the dough ball next to a banana for size reference but it was heavy and as big as my palm - it was crazy. My husband knew I was making cookies but didn't realize it was just one. His face when he walked in when I had this giant cookie was priceless. We ended up splitting it four ways and it was awesome!

What you need:

  • 1/2 cup all purpose flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbsp. unsalted butter, room temperature
  • 2 Tbsp. granulated sugar
  • 2 Tbsp. brown sugar
  • 2 Tbsp. beaten egg (crack an egg, beat it, and use 2 Tbsp.)
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. creamy peanut butter
  • 1/4 cup Reese's Pieces, plus some for on top
  • 1/4 cup semisweet chocolate chips

Directions:

  1. In a large mixing bowl, beat together butter with sugars until light and fluffy.
  2. Add egg and vanilla and mix until well combined. Stir in peanut butter.
  3. Then add flour, baking soda, and salt. Mix until just combined.
  4. Fold in Reese's Pieces and chocolate chips.
  5. Scoop the dough into a ball that is tall onto a parchment paper or silicone mat lined baking sheet and then add a few Reese's Pieces on top.
  6. Bake in a preheated 350 degree oven for 17 to 19 minutes or until edges are golden brown.
  7. Let cool on the baking sheet for 10 minutes.
