Summer Grilled Corn Salad

The perfect summer side dish for any cookout - bright, fresh, and light!

I have some side dish recipe saved to try but I honestly usually forget about them. I tend to like to just make a couple vegetable, carb, and/or starch sides and call it a day. But I made this last summer and it is one of my favorite things ever. I love sweet corn and especially enjoy fresh sweet corn cooked on the grill. I love that this is just a ton of veggies. I did not make the avocado cilantro lime dressing but chose to use some of the elements of it so that Nick would eat it. He doesn't do dressing.

What you need:

  • 4 ears corn, husks and silks removed
  • 1 small green bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 2 cans black beans, rinsed and drained
  • 2 cups grape tomatoes, halved
  • 1 small red onion, diced
  • 2 avocados, diced
  • 1 cup cilantro, chopped
  • 2 to 3 Tbsp. lime juice
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • Ground black pepper

Directions:

  1. Grill corn until one side starts to char, turn and char the other sides. Let cool then slice corn off the cob and place in a large bowl.
  2. Add remaining ingredients except avocado. Toss to combine.
  3. Add avocado and toss gently as to not smash. Serve immediately.
