Pepperoni Pizza Omelets

Before leaving for Knoxville for Christmas, I needed to clean out my fridge of all perishable items. Usually I leave the last 2 days before heading out as a sort of fend-for-yourself type deal with meals. The night we left, I had a ton of eggs and cheese and pepperoni. My husband is always begging for eggs anyways, so I figured no one would mind omelets for dinner. I also had some Classico sweet basil sauce (my favorite!) and decided to go for some pepperoni pizza omelets. They were good. They were so so good. They were also pretty filling because they are 3-egg omelets.

What you need:
  • 3 eggs
  • 3 Tbsp. milk
  • Salt and pepper, to taste
  • Italian seasoning
  • Sliced Mozzarella cheese
  • 1 Tbsp. butter
  • Pepperoni
  • Pizza sauce for serving
Directions:
  1. Beat together eggs and milk. Season with salt and pepper.
  2. Melt butter in a small skillet over medium heat.
  3. Pour eggs into skillet. Push cooked eggs to the center gently, letting the raw eggs come to the outside.
  4. Once eggs are almost set completely, sprinkle with Italian seasoning. Top with mozzarella and pepperoni on one side
  5. Flip other side over on top and cover. Cook for a couple more minutes, until eggs are cooked and cheese is melted.
  6. Serve topped with pizza sauce.
