What you need:
- 6 peppers, any color (we used 4 green)
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1 cup cooked rice
- 3 green onions, sliced
- 1 cup corn
- Shredded cheese
- Salsa, if desired
- Cook ground beef until browned, drain if necessary.
- Add taco seasoning and a little water. Simmer for 5 minutes.
- Add rice, onions, and corn; mix well.
- Slice the top off peppers and hollow them out.
- Stuff with beef mixture. Top with cheese.
- Bake for 30 minutes at 400* - serve topped with salsa, if desired.

Ok, I have to be honest here. I have never EVER tried any version of stuffed peppers. I have thought of making them before but Shayne is like traumatized by them because his mom apparently makes some really horrible stuffed peppers that he was forced to eat as a child. He even said lately thought that he'd be open to trying them now as a grown up & with a different recipe, so I think I'm going to have to give one of these a try soon! These look & sound yummy!!!
