Mexi Stuffed Peppers

These stuffed peppers were awesome - there was no boiling and burning my hands and the filling was very easy to make and full of flavor!

What you need:
  • 6 peppers, any color (we used 4 green)
  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1 cup cooked rice
  • 3 green onions, sliced
  • 1 cup corn
  • Shredded cheese
  • Salsa, if desired
Directions:
  1. Cook ground beef until browned, drain if necessary.
  2. Add taco seasoning and a little water. Simmer for 5 minutes.
  3. Add rice, onions, and corn; mix well.
  4. Slice the top off peppers and hollow them out.
  5. Stuff with beef mixture. Top with cheese.
  6. Bake for 30 minutes at 400* - serve topped with salsa, if desired.

Ok, I have to be honest here. I have never EVER tried any version of stuffed peppers. I have thought of making them before but Shayne is like traumatized by them because his mom apparently makes some really horrible stuffed peppers that he was forced to eat as a child. He even said lately thought that he'd be open to trying them now as a grown up & with a different recipe, so I think I'm going to have to give one of these a try soon! These look & sound yummy!!!
