Bacon-Wrapped Gouda Stuffed Chicken

When I was little, my stepdad would buy gouda on occasion and we'd eat with Ritz crackers. I quite literally haven't had it in a decade and I saw this chicken being passed around Pinterest and all those memories came swarming back. My hubs is a little weary of trying new things. I tried to explain to him that gouda (from what I remembered) was smokey and kind of like cheddar. I decided to go ahead and plan to make this and convince Nick to love gouda cheese.

I brought it home and had him smell it first. I tried it - and remembered exactly why I loved it. I made him try a piece - even though he looked like I was trying to poison him. I wish I would've taken a picture of his expression after tasting it - he was seriously blown away and wondering why he'd never tried it before. I think it's safe to say it's his new favorite cheese. Gouda is the bacon of cheese. Really.

What you need:
  • 4 chicken breasts, flattened (I also cut mine in half)
  • 1/4 tsp. cayenne
  • 1/2 tsp. garlic
  • 1/2 tsp. paprika
  • 1/2 tsp. pepper
  • Bacon
  • 3 to 4 oz. gouda cheese
Directions:
  1. Combine cayenne, garlic, paprika, and pepper. Season chicken breasts.
  2. Add a little gouda to each piece of chicken and roll up.
  3. Wrap in bacon.
  4. To make them crispy, brown in a skillet on both sides.
  5. Then bake at 350* for 20 minutes.

I love gouda too; it is one of my favorite cheeses. This recipe sound delicious. How could any thing with gouda and bacon be bad? Thanks for linking up to Whatcha Whipped Up!
